The ring at the bottom indicates how to set a more coarse/fine setting. And as with all other CrushGrind® mills the setting will remain in the chosen position until you decide to change it.

Salt or pepper, just flip the lid - each grinder has both an S or P indicator. 

The grinder is mounted with the patented mechanism from CrushGrind®.
